Meet the Future Home of Grove & Grain

There’s something special about an old building before it becomes something new.

Before the polished bar, the bottles on the shelves, the music, the cocktails, and the people filling the room, there are worn floors, exposed brick, open walls, and more than a century of stories hidden beneath the surface.

This is where Grove & Grain begins its next chapter.

We’re restoring a historic 1915 building in the heart of Downtown Brooksville to become the future home of Grove & Grain Distillery. When we're finished, this space will be home to our distillery and a speakeasy-inspired tasting room built around the same thing that inspires our spirits: Old Florida.

Starting With What Was Already Here

One of the things we love most about this building is that it doesn't need us to give it character. It already has plenty.

As we've opened walls and stripped away layers added over the years, we've been able to see pieces of the building that haven't been visible in decades. Original brick walls. Old wood floors. Heavy timber overhead. And little reminders that generations of people occupied this space long before we arrived.

Some of our favorite discoveries have been the simplest ones—including names, dates, and markings written directly onto the old walls.

We don't want to erase that history.

We want Grove & Grain to feel like it belongs here.

Building Something New Without Losing the Old

There is a long way to go between the building you see in these photographs and the Grove & Grain we have pictured in our heads.

But that's part of the fun.

Our vision is to create a space that feels as though it could have always been here—a place where the history of the building meets the story of Florida spirits.

The exposed brick, aged wood, original architectural details, and imperfections aren't obstacles we're trying to cover up. They're part of what will eventually give the tasting room its character.

When you walk through our doors, we don't want you to feel like you've stepped into a brand-new bar designed to look old.

We want you to feel like you've discovered a piece of Old Florida.

More Than a Tasting Room

Eventually, these empty rooms will look very different.

Our stills will be running. The bar will be pouring Grove & Grain spirits. You'll be able to sit down with a cocktail, learn the stories behind what you're drinking, and experience the Florida history that inspires everything we make.

But we think the journey to get there is worth sharing, too.

So we're starting here—with the building exactly as we found it.

Over the coming months, we'll use these Location Updates to bring you behind the scenes as construction progresses, equipment moves in, the bar takes shape, and this old Brooksville building slowly becomes Grove & Grain Distillery.

Someday we'll look back at these photographs and probably have a hard time believing this is where we started.

For now, though, this is home.
